Cheesy Veggie Loaded Macaroni Pasta
A creamy and cheesy veggie-loaded macaroni pasta that combines fresh vegetables and smooth cheese for a satisfying, family-friendly meal.

8 slices | Britannia The Laughing Cow Cheese Slices, torn into pieces |
400 g | Cauliflower |
250 g | Zucchini |
2 tbsp | Butter |
2 tbsp | Flour |
1 | Onion, finely diced |
250 ml | Milk |
Method
- Boil the pasta according to packet instructions. Drain and set aside.
- Roughly chop the cauliflower and zucchini. Steam them until tender, then set aside.
- In a saucepan, heat the butter or oil. Add the diced onion, and sauté until the onion is softened and translucent.
- Stir in the flour and cook for around 2 minutes, stirring constantly.
- Slowly pour in the milk, stirring to prevent lumps. If you preheat the milk, the sauce will thicken more quickly. Bring the sauce just to a boil, then reduce the heat and let it thicken until smooth.
- Add 6 torn Britannia The Laughing Cow Cheese Slices into the sauce, stirring until melted. Remove from heat once smooth.
- Puree the cooked cauliflower and zucchini until smooth and mix it into the cheese sauce. Combine the sauce with the cooked pasta.

1/4 cup | Onion, finely chopped |

Method
- Heat butter in a pan over medium heat. Add the onions and green chillies, and sauté until softened.
- Stir in the dry mango powder, dabeli masala, salt, and pepper. Cook for a few minutes. Add the boiled potatoes and mix thoroughly. Add a small amount of water if needed to bring it together. Set aside to cool.
- Heat 1 tbsp oil in a pan over medium heat. Add the peanuts, turmeric, red chilli powder, and salt. Toss well to coat and toast for a few minutes. Set aside.
- In a blender, combine the garlic, red chilli powder, lemon juice, and salt. Blend until smooth.
- Slice each dinner roll in half. On one side, spread a layer of garlic chutney, then add a layer of the dabeli filling.
- Top the filling with a few pieces of onion, masala peanuts, a sprinkle of nylon sev, and torn pieces of Britannia The Laughing Cow Cheese Slices.
- Spread tamarind chutney on the other half of the roll. Close the roll and toast it on a hot skillet with butter until golden and slightly crisp.
- Serve the dabeli hot, garnished with more sev if desired.
