Cheese & Potato Pie

A comforting and hearty dish combining creamy mashed potatoes with melted cheese, perfect for a warming family meal.

Ingredients

1 kg Potatoes, peeled and chopped
200 gCheddar cheese, grated
200 mlMilk
50 gButter
to tasteSalt and pepper
1Onion, finely chopped
1Garlic clove, minced
1 tbspOlive oil

Method

  • Preheat the oven to 200°C.
  • Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter. Season with salt and pepper.
  • In a pan, heat the olive oil and sauté the onion and garlic until soft.
  • Mix the onion and garlic into the mashed potatoes, along with half of the grated cheddar cheese
  • Transfer the mixture to a baking dish, smooth the top, and sprinkle the remaining cheese over it.
  • Bake in the preheated oven for 25-30 minutes until golden and bubbling. Serve hot and enjoy.

Camembert Pull Apart Bread - Serves 6

Camembert Pull Apart Bread

A delightful and interactive appetiser featuring a warm, gooey Camembert cheese surrounded by soft, pull-apart bread.

Ingredients:

1Round loaf of crusty bread
1Whole Camembert cheese
2 Garlic cloves, thinly sliced
1 tbsp Fresh rosemary, chopped
2 tbspOlive oil
to tasteSalt and pepper

Method:

  • Preheat the oven to 180°C (160°C fan/gas mark 4).
  • Cut the bread in a crisscross pattern, without slicing all the way through.
  • Insert slices of garlic and pieces of rosemary into the cuts in the bread.
  • Place the Camembert in the centre of the bread, scoring the top of the cheese.
  • Drizzle olive oil over the bread and cheese, and season with salt and pepper.
  • Wrap the whole thing in foil and bake for 15 minutes.
  • Unwrap and bake for another 5 minutes until the cheese is melted and the bread is crisp.
  • Serve immediately.

Method

  • Preheat the oven to 200°C (180°C fan/gas mark 6).

  • Centre the Brie on the pastry and drizzle with honey.
  • Fold the pastry over the Brie, sealing the edges to encase the cheese.
  • Bake for 20-25 minutes until the pastry is golden brown.
  • Let it cool for a few minutes before serving. Garnish with chopped nuts or dried fruit if desired.
