Bihari Style Litti Chokha With Cheese

For the litti dough

5Garlic cloves, grated
2 tbspCilantro, chopped
2 tbspWater
2 tbspPickle masala
1 Green chilli, finely chopped
1 inch Ginger, grated
1/2 tspAjwain
1/2 tspAmchur
1/2 tspKalonji
To tasteSalt
For the chokha
QuantityIngredients
4 Tomatoes
4Garlic cloves
2Potatoes
2Green chilli, chopped
3 tbsp Cilantro, chopped
1 tspMustard oil
1Eggplant

Method

  • Start by preparing the litti by taking atta in a mixing bowl. Add salt, ghee and yoghurt to the vessel. Add water slowly and knead into a smooth dough. Cover it with a damp cloth and allow it to rest for some time.
  • For the filling, add sattu and mix it with mozzarella cheese in a bowl and add finely chopped onion, mustard oil, green chilli, chopped cilantro, kalonji, ajwain, amchur, grated ginger and garlic and salt. Add pickle masala and mix evenly. You can add a few tbsp of water and make it a little damp.
  • Divide the dough into 8 equal parts and roll each dough into a circle. Put 2 tbsp of sattu-cheese filling and start sealing the edges nicely, so the filling doesn’t come out. Roll between your palms and make it smooth.
  • Place the littis on a baking sheet and bake for around 40-45 minutes. Flip the littis 2-3 times in between and dip in melted ghee immediately. Next, for chokha, roast eggplant and tomato on direct fire for 15-20 minutes.
  • Don’t forget to chop the garlic cloves also. Add the roasted eggplant and tomatoes, peel the skin and mash them nicely. Add boiled mashed potato, ginger, roasted garlic, salt and green chilli. Also, add chopped cilantro and mustard oil. Servi litti and chokha with a dollop of ghee and enjoy!
