Carrot halwa with Cream Cheese Rabdi

Every winter is incomplete without relishing a bowl full of gajar halwa topped with rabdi and nuts. This popular Indian dessert is prepared with an easy blend of carrot halwa, condensed milk and cardamom powder. This Punjabi delicacy is cooked with ghee and sugar.
Halwa is an Arabic word that means “sweet” and is cooked with sugar and ghee. This dessert is reserved for celebratory occasions and north Indians delightful savour this with chopped nuts for a change. Although the halwa looks like a pudding that must have been prepared with a thickening agent, to your surprise it's not!
Every special winter occasion sees gajar ka halwa and the sweet flavour of the juicy carrots can definitely transport you to another world. Carrot halwa with Cream Cheese Rabdi

With an easy and delightful halwa recipe, prepare cream cheese rabdi at home for the hearty winter season.

Ingredients

For the carrot halwa

1 tspCardamom powder
1/4 tspWarm milk
1 cup Condensed milk
1/2 cupDry fruits, chopped
3 tbspGhee
3 dropsKewra water
For cream cheese rabdi

250 mlMilk
3 tbsp Condensed milk
100 gCream cheese
1/4 cupMilk
1/2 tspCardamom powder

Method

  • Start by grating the carrots and transferring them to a heavy-bottomed kadhai. Ensure that the white portion of the carrots are completely discarded. Keep on stirring the grated carrot for 5 minutes on medium flame and cook covered.
  • Once the grated carrots are soft enough, add ghee into the vessel and mix evenly. Stir cardamom powder for a delightful essence. Now, add condensed milk to the carrot mixture and mix evenly. Top the halwa with chopped dry fruits and allow it to cook for 5-7 minutes. After cooking it for 5 minutes, add kewra water and set it aside.
  • Now, for the cream cheese rabdi, heat milk in a pan and add cardamom powder to it. Ensure that the ingredients are added after the milk has been reduced in quantity. Add condensed milk after cardamom powder and mix evenly.
  • Add milk in a mixing bowl and add corn flour into it. Mix evenly and ensure that the milk mixture is lump-free. Once the milk has thickened on its own, slowly add the corn flour mixture and finally, stir cream cheese into the mixture. Mix it evenly. Now, for serving add gajar halwa on the bottom layer and add cream cheese rabdi on top. Garnish with nuts and enjoy!
