Ingredients

For Cooking Noodles:

2½ cups Water
¼ tsp Salt
1 tsp Toasted sesame oil (or neutral oil)

For the Cornstarch Slurry (Optional):

2 tbsp Onions, finely chopped
¼ cup Button mushrooms, chopped
2 tbsp French beans, chopped
¼ cup Carrots, grated
¼ cup Cabbage, shredded
2 tbsp Capsicum, thinly sliced
½ tsp Celery, finely chopped (optional)
1½ tsp Soy sauce (or as required)
1 tsp Tomato ketchup (optional)
¼ tspBlack pepper
½ tsp Rice vinegar (or regular vinegar)
To tasteSalt

For Garnish:

1-2 tbsp Spring onion green, chopped

Method

  • Cook noodles according to package instructions. Drain and rinse in cold water. Drizzle with sesame oil, toss well to coat, and set aside.
  • In a small bowl, prepare the cornstarch slurry by mixing cornstarch and water. Set aside.
  • Heat oil in a pan or wok over medium heat. Sauté the green chilies, ginger, and garlic for about 30 seconds.
  • Add chopped onions and sauté for another minute. Add the chopped mushrooms and French beans, stir-frying for 2-3 minutes until the mushrooms begin to brown.
  • Add grated carrots, cabbage, and bell pepper. Stir-fry on high heat for 2-3 minutes until the vegetables are tender yet crisp.
  • Pour in soy sauce, tomato ketchup, pepper, and salt to taste. Add tofu now if desired. Stir well.
  • Lower the heat and stir in the cornstarch slurry. Mix well and cook for another minute.
  • Add the cooked noodles to the pan. Increase the heat, toss well to combine with the veggies. Add rice vinegar and stir through.
