Method

  • Preheat the oven to 180℃ and spread the store-bought nachos in a baking tray. Alternatively, you can buy tortilla chips, cut them into triangular shapes and bake them at 175℃ in a preheated oven till they turn crisp and slightly brown.
  • Sprinkle grated cheese and jalapeno slices on the nacho chips and place them in the preheated oven for ten minutes till you see bubbles on the cheese.
  • Prepare the salsa by mixing onions, tomatoes, coriander leaves, green chillies, lime juice and salt.
  • Add salsa to the cheesy nachos and serve with sour cream dip.

Chilli Cheese Toast - Serves 4

Chilli Cheese Toast

1 cupCheddar or mozzarella cheese, grated
4 slicesBread
2Green chillies, chopped
1Tomato, chopped

Method
  • Preheat the oven to 180℃ and spread butter on one side of the bread slices. Mix chopped green chillies, tomatoes, onions and grated cheese with black pepper, salt and mix the ingredients thoroughly.
  • Spread the mixture evenly on the buttered slices and place them in the oven to be baked for ten minutes. Once the cheese has melted and appears golden brown, cut it into half and serve with chutney.

Cheese Paneer Tikka - Serves 4

1 tspTurmeric powder
2 tspTandoori masala

Method

  • To make cheesy paneer tikka, cut the paneer into cubes and keep them aside. Prepare a marinade out of tandoori masala, yoghurt, ginger-garlic paste, red chilli powder, turmeric powder and salt.
  • Add the paneer cubes to the marinade and let it sit for at least two hours. Meanwhile, cut the onions and bell peppers in squares.
  • Soak the skewers in cold water for five minutes and add the vegetables and the marinated paneer cubes alternatively.
  • Place the skewers on a grill and let them cook in a medium heat. Cook till the paneer turns golden brown.
  • Cut the cheese slices into strips, place them on top of the paneer and veggies and let them melt slightly.
  • Serve cheese paneer tikka with mint chutney.

Cheese- Stuffed Mirchi Pakora

1 cupBesan (gram flour)
4Green chillies, chopped
1/2 tspTurmeric powder
1/2 tspRed chilli powder
A pinchSalt
Oil (to deep fry)

Method

  • Take the green chillies and slit them vertically. De-seed and fill the chillies with one or two cheese slices.
  • Prepare the batter by mixing besan with red chilli powder, turmeric powder and salt. Add water and mix till it forms a thick batter.
  • Pour some oil into a kadai to deep fry the chillies and turn on the flame. Dip each chilli in the prepared batter and ensure it coats evenly.
  • Place the chillies into the kadai individually and take them out once golden brown.
  • Serve cheese-stuffed mirchi pakoras with mint chutney or ketchup.

2 tbspPav bhaji masala

Method

  • Prepare the bhaji by boiling the vegetables until they turn soft. Add some butter to a pan and saute the onions and tomatoes until they turn golden brown and soft, respectively.
  • Add salt and pav bhaji masala, add the boiled vegetables and water, and mash the ingredients till it forms a smooth mixture.
  • Add red chilli powder and garam masala, mix thoroughly and let it cook for ten minutes. Turn off the flame once cooked.
  • Add some butter to a pan and toast the pav buns till they are crisp and golden brown.
  • Place the cheese slices on the lower half of the bun and add the prepared bhaji on top. Cover using the top half of the bun and sprinkle finely chopped coriander leaves
