Method

  • To prepare the aloo bhaji, boil the potatoes, and then lightly saute them with the onions and spices until tender and flavourful.
  • Place a griddle or non-stick pan over medium heat and allow it to warm up thoroughly.
  • Once the griddle is adequately heated, take a ladleful of dosa batter and pour it onto the centre of the griddle.
  • Using the back of the ladle or a circular motion with the ladle itself, spread the dosa batter thinly and evenly across the surface of the griddle in a circular motion. Aim for a uniform thickness throughout.
  • Allow the dosa to cook until it starts to dry out from the top. You'll notice small bubbles forming on the surface and the edges beginning to lift slightly.
  • Once the dosa begins to dry out, add a dollop of butter or ghee to the surface of the dosa. The butter will melt and spread across the dosa as it continues to cook, enhancing its flavour and texture.
  • Before removing it from the pan, scatter the grated Britannia The Laughing Cow Cheese Block over the top of the dosa.
  • Using a spatula or the back of a spoon, spread the cheese evenly over the surface of the dosa. This ensures that the entire dosa is coated with cheese, adding richness and flavour.
