Cheesy Enchiladas

Made with gooey cheese and a spicy sauce, this enchilada is perfect for tonight's dinner.

Ingredients:

15 ounceTomato sauce
6 ounceTomato paste
2 tspCreole seasoning
12 ounce Corn tortillas
8 ounce Cheddar cheese, shredded
1 Onion, diced
6 ounce Ripe olives, sliced
6 ounceMushrooms, sliced

Method

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together the tomato sauce, tomato paste and Creole seasoning until well combined.
  • Warm the tortillas in the microwave or oven until they’re pliable. Dip each tortilla into the tomato sauce mixture, coating both sides, and place them in a 9x13 inch casserole dish.
  • Fill each tortilla with a portion of shredded cheese, diced onion, sliced olives and mushrooms. Roll up the tortillas and arrange them in the dish, seam-side down.
  • Once all the tortillas are rolled and, in the dish, sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 25 to 30 minutes, or until the cheese on top is melted and bubbly. Remove from the oven and serve warm.
