Cheesy Enchiladas
Made with gooey cheese and a spicy sauce, this enchilada is perfect for tonight's dinner.
Ingredients:
Quantity | Ingredients |
15 ounce | Tomato sauce |
6 ounce | Tomato paste |
2 tsp | Creole seasoning |
12 ounce | Corn tortillas |
8 ounce | Cheddar cheese, shredded |
1 | Onion, diced |
6 ounce | Ripe olives, sliced |
6 ounce | Mushrooms, sliced |
Method
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the tomato sauce, tomato paste and Creole seasoning until well combined.
- Warm the tortillas in the microwave or oven until they’re pliable. Dip each tortilla into the tomato sauce mixture, coating both sides, and place them in a 9x13 inch casserole dish.
- Fill each tortilla with a portion of shredded cheese, diced onion, sliced olives and mushrooms. Roll up the tortillas and arrange them in the dish, seam-side down.
- Once all the tortillas are rolled and, in the dish, sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25 to 30 minutes, or until the cheese on top is melted and bubbly. Remove from the oven and serve warm.
