Cheesey Mashed Potatoes

Cheesy Mashed Potatoes are fluffy, creamy, and topped with a golden cheese crust. Perfect for any occasion, they can be served fresh or prepared ahead and frozen.

1 tbsp Salt
120 ml Butter, melted
120 ml Sour cream
200 gms Britannia The Laughing Cow Cheese Block, grated
2 Garlic cloves, minced
1 tsp Salt
¼ tsp Black Pepper
For garnishFresh parsley, minced

Method

  • In a large 5-litre pot, boil 2 inches of water with 1 tablespoon of salt. Ensure there is enough water to cover the potatoes, adding more if needed.
  • Rinse, peel, and dice the potatoes into chunks. Add them to the boiling water, cover partially, and cook over medium-low heat for 20-25 minutes or until fork-tender.
  • Drain the potatoes and return them to the pot. Sprinkle with 1 teaspoon salt, add the melted butter, and mash until smooth and well-combined.
  • In a large bowl, stir in half the grated Britannia The Laughing Cow Cheese Block, until incorporated. Stir in the sour cream, minced garlic, and black pepper.
  • Fold the cheese mixture into the mashed potatoes, mixing gently to avoid making the potatoes gummy. Spread the mixture evenly into a greased 2- or 3-litre casserole dish.
  • Sprinkle the remaining Britannia The Laughing Cow Cheese Block over the top of the potato mixture.
  • Preheat the oven to 175°C. Bake, covered, for 20 minutes. Remove the foil and bake for an additional 20-25 minutes until the cheese is melted and the potatoes are heated through. If baking immediately, reduce baking time by 15 minutes and leave uncovered. Garnish with parsley or chives if desired.
