1/2 cup Bell peppers, chopped

1 tspPaprika
1/2 tspDried oregano
To tasteSalt and pepper
As neededFresh parsley or chives, chopped

Method

    In a medium-sized saucepan, combine the rinsed quinoa with the vegetable broth, garlic powder, ground mustard, onion powder, and paprika. Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the quinoa has absorbed all the liquid and is fluffy. Remove from heat and let it sit, covered, for an additional 5 minutes.
