Method

  • In a food processor, start by adding the semi -sweet cookies until broken into small pieces. Gently add melted butter and use a spatula to mix the butter completely.
  • Transfer the mixture to the pan and evenly spread the crumbs to the bottom and the sides as well. Preheat the oven to 180 °C and bake the crust for 10 minutes until golden brown.
  • In a bowl, add chocolate chips and pour hot coffee. Microwave for 25 seconds and don’t forget to stir in between.
  • Add cream cheese (room temperature) to the mixture and mix, mix, mix. Add salt and sugar, and mix until smooth. Add sour cream, vanilla extract and eggs one by one and sprinkle some flour. Gently scrape the bowl.
  • Transfer the batter to a pan and bake for 20 minutes at 160 °C. Reduce the temperature to 140 °C and bake for another 30 minutes. Allow the cake to rest in the off oven for an hour and chill it overnight.
  • In a small bowl, melt the semi sweet chocolate in a microwave and spread onto the cheesecake. Return it to the refrigerator to cool for a while.
  • Add cold cream, powdered sugar and vanilla extract to the mixer. Gently add cocoa powder and mix well.
  • Transfer the cream into the piping bag and make desirable designs on the cake’s edges. Serve chilled and enjoy!
