Method

  • Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil.
  • Add the penne pasta and cook according to the package instructions until al dente (firm to the bite, typically 9-11 minutes).
  • Drain the pasta, reserving ½ cup of the cooking water, and set it aside.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sliced smoked sausage and cook for 5-7 minutes, stirring occasionally, until browned on both sides. Transfer the cooked sausage to a plate and set aside.
  • In the same skillet, melt 2 tablespoons of butter over medium heat.
