Method

  • In a large bowl, combine flour and salt. Make a well in the center, add eggs, and water. Stir until dough forms. Turn it out onto a floured surface and knead for 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  • In a medium bowl, combine ricotta cheese, Parmesan cheese, spinach, salt, and pepper. Mix well.
  • Divide the dough in half. Roll out one half on a floured surface into a thin sheet. Repeat with the other half.
  • Cut the dough into squares. Place a spoonful of filling in the center of each square. Fold the dough over and pinch the edges together to seal.
