200 gms | Chocolate sandwich cookies, crushed |
75 gms | Butter, melted |
500 gms | Cream cheese, softened |
200 gms | Dark chocolate, melted and cooled |
150 gms | Milk chocolate, melted and cooled |
150 gms | White chocolate, melted and cooled |
150 gms | Granulated sugar |
2 | Eggs |
1 tsp | Vanilla extract |
Method
- Mix the crushed chocolate sandwich cookies with melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan.
- Chill in the fridge while preparing the cheesecake layers. Preheat the oven to 160°C (325°F).
- In a large bowl, beat the cream cheese and sugar until smooth and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Divide the cream cheese mixture into three equal portions. Mix each portion with a different type of melted chocolate (dark, milk, and white).
- Pour the dark chocolate layer over the chilled crust, smoothing it out evenly. Gently spoon the milk chocolate layer over the dark chocolate. Finally, pour the white chocolate layer on top.
- Place the springform pan in a larger roasting pan filled with hot water (to prevent cracks). Bake for 50-55 minutes or until the center is just set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Refrigerate for at least 4 hours or overnight.
- Serve chilled with chocolate shavings or a drizzle of melted chocolate for garnish. Enjoy!
