1 cup Mashed ripe bananas
1 cup All-purpose flour

¼ cup Sour cream or Greek yoghurt
¼ cup Granulated sugar
¼ cup Liquid-state coconut oil
2 tspVanilla extract

½ tsp Baking soda
½ tsp Baking powder

¼ cup Granulated sugar
3 tbsp All-purpose flour
1 Large egg

Method

  • Start by preheating the oven to 350F and greasing the pan. Prepare the banana bread and in a large bowl and add the sugar, coconut oil, vanilla and egg. Whisk to combine to mixture and add the bananas to stir to incorporate.
  • Add baking powder, salt, baking soda and 1 cup flour into the large bowl. Stir gently with the help of a spoon and spatula, and set aside. Ensure that you’re not overmixing it. Stir about 2-3 of the batter in the prepared pan, smoothing the top lightly with a spatula.
  • Now, prepare the cream cheese filling by adding all the ingredients in a large mixing bowl with a hand mixer. Evenly pour the filling mixture over the bread and smooth the top lightly with a spatula and push it into the corners, so the mixture is spread completely.
  • Top the mixture with the remaining batter and ensure that the cream cheese layer is not disturbed. Bake the batter for about 48-50 minutes or until the top is golden and centre is set. Allow the bread to cool in a pan for about 15 minutes and slice it accordingly.
