Ingredients:

2 cups | Fresh broccoli florets, chopped |
2 tbsp | Olive oil |
3 | Garlic cloves, minced |
2 tbsp | All-purpose flour |
1 1/2 cups | Milk (whole milk or 2%) |
1 cup | Cheddar cheese, shredded |
1/2 cup | Parmesan cheese, grated |
To taste | Salt and pepper |
Red pepper flakes | |
For garnish | Fresh parsley or basil, chopped |
Method
- In a large pot of salted boiling water, cook the spaghetti according to package instructions. About 2-3 minutes before the spaghetti is done, add the broccoli florets to the pot. Drain the spaghetti and broccoli together and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Sprinkle the flour over the garlic and stir well, cooking for 1-2 minutes. Slowly pour in the milk, whisking constantly to combine, until smooth and slightly thickened.
- Reduce the heat to low and add the cheddar and Parmesan cheese, stirring until the cheese melts into a smooth, creamy sauce. Season with salt, pepper, and red pepper flakes if using.
- Add the drained spaghetti and broccoli to the skillet, tossing to coat everything in the cheesy sauce. Adjust seasoning if necessary. Serve hot, garnished with fresh parsley or basil
