Cheesy Broccoli Spaghetti

2 cups Fresh broccoli florets, chopped
2 tbspOlive oil
3 Garlic cloves, minced
2 tbsp All-purpose flour
1 1/2 cups Milk (whole milk or 2%)
1 cup Cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
To tasteSalt and pepper
Red pepper flakes
For garnishFresh parsley or basil, chopped

Method

  • In a large pot of salted boiling water, cook the spaghetti according to package instructions. About 2-3 minutes before the spaghetti is done, add the broccoli florets to the pot. Drain the spaghetti and broccoli together and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Sprinkle the flour over the garlic and stir well, cooking for 1-2 minutes. Slowly pour in the milk, whisking constantly to combine, until smooth and slightly thickened.
