Cream cheese is widely used for enhancing the texture and flavour of dips and spreads. Made from milk and cream, it is a primary ingredient for frosting cakes, cheesecakes and other desserts. You can also add it to savoury dishes like mashed potatoes, soups and sauces for extra creaminess. Suprisingly, it is also easy to make at home.

The use of cream cheese is beyond frosting, spreads and dips. It is a perfect addition to savoury dishes too. Here is an easy recipe to prepare this delightful dairy product at home.
Ingredients

4 cups | Full fat milk |
2-3 tbsp | Lemon juice |
1/2 tsp | Salt |
Method
- In a large saucepan, heat the milk over medium heat until it reaches around 75°F (24°C). Don't let it boil.
- Slowly whisk in the lemon juice. You'll see the milk start to curdle and separate into curds and whey.
- Remove the pan from heat and let the mixture sit undisturbed for 15-20 minutes. The curds will continue to separate.
- Line a fine-mesh sieve with cheesecloth or a thin kitchen towel. Set the sieve over a bowl and carefully pour the curds and whey through the sieve. The whey will drain into the bowl, and the curds will be retained in the cheesecloth.
- You can briefly rinse the curds under cool running water to remove any excess tanginess from the lemon juice.
- Gather the corners of the cheesecloth and twist to form a pouch. Gently squeeze out any remaining whey. Transfer the curds to a container and refrigerate for at least 4 hours, or overnight, for a firmer texture.
- Once chilled, your homemade cream cheese is ready to spread on bagels, use in cheesecakes or enjoy however you prefer.
