For the chocolate crust

½ cup | Sugar, granulated |

¼ cup | Cocoa powder |
For the cheesecake filling

¼ cup | Brown sugar |
3 tbsp | Cocoa powder |
¾ cup | Heavy whipping cream |
5 | Large eggs |
2 tsp | Vanilla extract |
For the ganache topping

150g | Chocolate (shavings) |
2/3 cup | Heavy whipping cream |
2 tbsp | Butter, melted |
As required | Chocolate syrup |
Method
- Start by preheating the oven and preparing the bottom layer of the cheesecake. Prepare one layer of graham crackers in a plastic freezer bag. Using a rolling pin, roll over the crackers until crushed completely.
- In a glass bowl, heat butter in the microwave bowl for about 20-30 seconds until melted completely. In another bowl, combine the graham crackers, cocoa powder and sugar along with melted butter for a smooth mixture. After mixing evenly, spread the layer of the graham crackers onto the bottom of the pan.
- For the cheesecake, use the double boiler method by placing chocolate in the top portion of the boiler. Bring it to a rolling boil over medium heat and turn off the heat. Stir occasionally until the chocolate is melted completely. Set aside.
- Place the softened cream in the bowl and pulse until smooth. Scrap the sides as needed for about 90 seconds. Stir brown sugar, cocoa powder and sugar into the cream cheese and pulse again until smooth and combined. Stir eggs, vanilla extract and heavy cream until well combined.
- Stir melted chocolate and blitz for another 20-30 seconds until blended thoroughly. Place the springform pan in the middle of the preheated oven and bake for 70-80 minutes until the centre of the cake is set. Once you notice that the cake is jiggly in the centre, run a knife around the sides of the pan to loosen it.
- Cool completely in a refrigerator for about 4-6 hours before removing the pan. Place whipping cream and butter in a microwavable bowl and heat for 90 seconds until the butter has melted. Break the chocolate bar into pieces and place in the heated cream. Slowly stir the mixture until the chocolate has melted.
- Pour ganache over the cold cheesecake and shred the remaining chocolate bar into curls and sprinkle over the top. Allow it to stand until the ganache has set about an hour.
- Slice the cheesecake with a knife and place the slices on a dessert plate. Garnish with chocolate syrup and enjoy!
