Method
- Preheat your oven to 200°C.
- Arrange the cauliflower florets in an ovenproof baking dish. Season with a pinch of sea salt and freshly ground black pepper, ensuring the florets are well-coated.
- Place the baking dish in the oven and roast for 20 minutes at 200 C, or until the cauliflower is tender and begins to brown at the edges.
- While the cauliflower roasts, melt the butter in a medium-sized saucepan over low heat. Add the flour and cook for 1–2 minutes, stirring continuously until the mixture forms a smooth paste with a light golden colour.
- Slowly pour in the milk, whisking continuously to prevent lumps. Continue stirring for about 3–4 minutes over a gentle heat until the sauce thickens and becomes smooth.
- Add the ground nutmeg to the sauce and stir to combine. Adjust the seasoning with a pinch of salt if desired.
- Reduce the heat to low, then add the Dijon mustard and grated Britannia The Laughing Cow Cheezza Cheese Block. Stir gently until all the cheese has melted into the sauce. Taste and add black pepper to taste.
- Remove the roasted cauliflower from the oven and carefully pour the cheese sauce over it, stirring to coat the cauliflower evenly.
