Cheese Kimchi Fried Rice
Kimchi cheese fried rice can give you a complete experience of bold flavours with the creaminess of melted cheese. It’s perfect for a cosy dinner.
Ingredients:

2 cups | Cooked white rice |
2 | Cheese slices |
1 cup | Kimchi, chopped |
3 tbsp | Kimchi juice (from the kimchi jar) |
1 tbsp | Gochujang (Korean red pepper paste) |
2 tsp | Soy sauce |
1 tbsp | Sesame oil |
1 tbsp | Vegetable oil |
1 clove | Garlic, minced |
1 | Green onion, chopped |
1 | Egg |
1 tbsp | Sesame seeds |
1 Cup | Mixed vegetables (carrots, peas, or bell peppers) |
Method
- If using fresh rice, spread it out on a plate and let it cool to reduce moisture. Day-old rice works best for this dish because it's less sticky.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium heat. Add minced garlic and sauté until fragrant.
- Add the chopped kimchi to the pan and sauté for 2–3 minutes until it becomes slightly caramelised. If using vegetables, add them now and cook until tender.
- Stir in the kimchi juice, gochujang, and soy sauce. Mix well to combine all the flavours.
- Add the cooked rice to the pan, breaking up any clumps. Stir everything together, ensuring the rice is evenly coated with the kimchi mixture.
- Drizzle 1 tbsp of sesame oil over the fried rice and give it a final toss. Taste and adjust seasoning if needed.
- In a separate pan, fry an egg sunny side up.
- Transfer the kimchi fried rice to a serving plate and top with two slices of cheese. Then add the hot fried egg which will make the cheese nice and melted.
- Garnish with chopped green onions, sesame seeds, and additional kimchi on the side if desired.
