Cheese Dhokla

Indian food has a multitude of options to offer when it comes to snacking, but if there’s one state that has snack-making down to a fine art, it’s Gujarat. Gujarati snacks are perfect for festive occasions, parties, or just for a lazy Sunday afternoon. From crunchy fafda or spicy dabeli there’s plenty to try but an eternal fan favourite is dhoklas.
Made from an aerated dough that’s steamed into a light, fluffy savoury cake and covered in a flavourful tadka, it’s easy enough to make, even last minute. With the goodness of Britannia The Laughing Cow Mozzarella Cheese - Diced, this is a modern fusion twist on the traditional Gujarati dhokla, blending the soft, spongy texture of semolina (sooji) with a spicy kick from green chillies and the rich creaminess of grated cheese. This dish marries textures and flavours, making it an exciting option for breakfast, snacks, or light meals.

Cheese Dhokla

A delightful fusion, this fluffy dhokla combines the tanginess of yoghurt with the richness of grated cheese and a spicy kick from green chillies.

Ingredients

Quantity Ingredients
1 cupSooji (semolina)
1 cup Britannia The Laughing Cow Mozzarella Cheese - Diced
1 tspSalt
1 tspSugar
1 tbsp Oil
1 cupYoghurt
1/2 tspBaking soda
1 tspGreen chillies, chopped
1/2 cupWater
For the Tadka:
QuantityIngredients
1 1/2 tspMustard oil
4Dried red chillies
1/2 tsp Black mustard seeds
1/4 tsp Cumin seeds
6-8Curry leaves

Method

    In a large bowl, combine the sooji, salt, sugar, oil, and yogurt. Mix thoroughly to form a smooth batter.
  • Gradually add ½ cup of water to the batter and mix until smooth.
  • Add the baking soda and mix quickly to avoid lumps.
  • Grease a baking pan and pour half of the batter into the pan. Sprinkle chopped green chillies and Britannia The Laughing Cow Mozzarella Cheese - Diced over the batter.
  • Pour the remaining half of the batter on top to cover the cheese and chillies.
  • Bake in an oven at 180 C or cook in a pressure cooker for around 15-20 minutes until cooked through.
  • In a pan, heat mustard oil and add mustard seeds, cumin seeds, dried red chillies, and curry leaves. Let them splutter for a few seconds.
  • Pour the hot tadka over the baked dhokla and serve immediately.
