For the brownie layer

Method
- To prepare this fudgy yet cheesy brownie at home, start by preheating the oven to 180 degrees Celsius. Now, grease and place a parchment paper in a baking tin evenly. In a heatproof bowl, add simmering water and combine dark chocolate and butter.
- Stir frequently until the dark chocolate and butter are combined and the mixture is smooth. Alternatively, you can also skip this step and melt it in the microwave for 30 seconds. Sift the cocoa powder over the top of the chocolate and butter mixture, and stir well.
- Now, in a large bowl, combine the eggs, brown sugar and granulated sugar. Mix everything on high speed with the help of an electric handheld mixer for 2-3 minutes. Once the mixture has lightened and increased in volume, use this step in a stand mixer using the whisk attachment.
- Add the chocolate mixture and mix well to combine, stir salt and vanilla and mix until well incorporated. Transfer the batter to the prepared pan and try tapping the pan on the counter a few times to ensure there are no air bubbles.
- For the cheesecake layer, add all the cheesecake layer ingredients in a medium bowl and combine with a hand mixer on medium speed until mixed evenly. Dollop about ¾ of the cheesecake mixture on top of the brownie batter and swirl it using a toothpick or spoon.
- Add the rest of the cheesecake mixture and swirl as desired. Bake the cheesecake brownies for about 20-25 minutes or until cooked properly. Ensure that the top of the brownies are set properly.
- Transfer the brownies from the oven to a cool place and allow the brownies to come to room temperature. Slice the brownies into squares and store the leftovers in an airtight container, serve and enjoy!
