Method
- Start by adding three eggs to a small bowl and season with salt. Beat everything well place a small non-stick pan over medium heat and add oil.
- Pour the eggs into the pan and stir the eggs from the centre. As the egg sets ensure that you are not scraping the edges of the cooked eggs. Add cheese to the eggs and continue cooking until the eggs begin to set.
- After the eggs have started to set, stop stirring and allow the omelette to set from the bottom. After 15-20 seconds, fold one edge of the omelette over, then fold the same edge again to slightly roll it.
- Next, take the opposite edge and flip the omelette so the open side is now on the pan. Allow it to set for about 15-20 minutes and immediately place the omelette over cooked rice. Slice lengthways and let the soft scrambled eggs fall out. Serve and enjoy.
