Lasagna is a classic comfort food that has won hearts worldwide. This Italian dish prepared with its layers of pasta, tomato sauce and melted cheese, is a perfect wholesome dinner. While traditional lasagna often features a meaty filling, a cheese vegetarian lasagna is equally satisfying, offering a flavourful, cheesy experience that appeals to both vegetarians and non-vegetarians alike. The star of any lasagna is undoubtedly the cheese, and in this recipe too, it takes centre stage.

Ingredients:

12Lasagna noodles
4 cups Mozzarella cheese, shredded
1/2 cupParmesan cheese, grated
1 jar (24 oz) Marinara sauce
2 cupsSpinach, chopped
1Zucchini, sliced
1Bell Pepper, diced
8 oz Mushrooms, sliced
2Cloves garlic, minced
1 tbspOlive oil
1 tspDried oregano
1 tsp Dried basil
To tasteSalt and pepper
Method
    Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to the package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add zucchini, bell pepper, mushrooms, and spinach. Cook until tender. Season with oregano, basil, salt, and pepper.
  • Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish.
  • Place a layer of lasagna noodles on top. Spread a layer of cheese over the noodles, followed by the sautéed vegetables, a sprinkle of mozzarella and a spoonful of marinara sauce.
  • Repeat the layers, ending with a layer of noodles topped with marinara sauce and the remaining mozzarella and Parmesan cheese.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is golden and bubbly.
  • Let the lasagna cool for 10 minutes before slicing. Serve warm and enjoy!
