Ingredients

1 ½ cups | Britannia The Laughing Cow Mozzarella - Diced |
2 cups | Water |
1 can | Tomatoes |
2 | Large onions, chopped |
3 | Garlic cloves, minced |
1/4 tsp | Dried mixed herbs |
1/4 tsp | Dried sage |
1/4 tsp | Dried thyme |
1 | Large bay leaf |
2 | Large carrots, cut into 1/2-inch pieces |
1 | Stalk celery, chopped |
1 | Medium green bell pepper, chopped |
To taste | Salt and pepper |
Method
- Preheat the oven to 190°C.
- In a large casserole dish, mix together the water, lentils, canned tomatoes, chopped onions, minced garlic, salt, pepper, mixed herbs, sage, thyme, and bay leaf.
- Place the casserole dish in the preheated oven and bake, uncovered, for 30 minutes.
- Stir in the carrots and celery. Cover the dish with a lid or aluminium foil and return it to the oven. Bake for an additional 40 minutes, or until the lentils and vegetables are tender.
- Remove the dish from the oven and stir in the chopped green bell pepper. Sprinkle the Britannia The Laughing Cow Mozzarella - Diced evenly over the top. Return the dish to the oven and bake, uncovered, for another 5 minutes, or until the cheese has melted.
- Remove the bay leaf before serving. Dish out the casserole while hot and enjoy it as a wholesome meal.
