This hearty baked lentil casserole combines tender lentils with vibrant vegetables and rich Britannia The Laughing Cow Mozzarella - Diced for a satisfying and nutritious meal. Perfect as a main dish, it’s easy to prepare and packed with flavour.

Ingredients

2 cups Dry lentils
1 ½ cups Britannia The Laughing Cow Mozzarella - Diced
2 cups Water
1 can Tomatoes
2 Large onions, chopped
3 Garlic cloves, minced
1/4 tsp Dried mixed herbs
1/4 tsp Dried sage
1/4 tsp Dried thyme
1 Large bay leaf
2 Large carrots, cut into 1/2-inch pieces
1 Stalk celery, chopped
1 Medium green bell pepper, chopped
To tasteSalt and pepper

Method

  • Preheat the oven to 190°C.
  • In a large casserole dish, mix together the water, lentils, canned tomatoes, chopped onions, minced garlic, salt, pepper, mixed herbs, sage, thyme, and bay leaf.
  • Place the casserole dish in the preheated oven and bake, uncovered, for 30 minutes.
  • Stir in the carrots and celery. Cover the dish with a lid or aluminium foil and return it to the oven. Bake for an additional 40 minutes, or until the lentils and vegetables are tender.
  • Remove the dish from the oven and stir in the chopped green bell pepper. Sprinkle the Britannia The Laughing Cow Mozzarella - Diced evenly over the top. Return the dish to the oven and bake, uncovered, for another 5 minutes, or until the cheese has melted.
  • Remove the bay leaf before serving. Dish out the casserole while hot and enjoy it as a wholesome meal.
