Step 1
Prepare hummus for sandwich
In a blender or food processor, combine 1 cup boiled chickpeas, 2 tbsp tahini, 1 tbsp lemon juice, 1 clove garlic, and ½ tsp cumin. Add 2-3 tbsp of reserved cooking water or plain water to achieve a smooth consistency while blending.Gradually drizzle in 2 tbsp olive oil while blending. Add salt to taste. Blend until creamy and smooth. Set aside. Evenly spread 1½ tbsp of hummus on the inner (non-buttered) side of each bread slice. Ensure the hummus is applied thinly but evenly.

Serve and enjoy!
Sprinkle ¼ cup of shredded cheddar cheese on top of the hummus on one slice. Heat a skillet over medium heat and add 2 tsp butter, allowing it to melt. Place one slice of bread, buttered side down, in the skillet. Top with the second slice, hummus side down. Move the sandwich gently around the skillet to coat it with the butter. Grill for 3-4 minutes, pressing lightly with a spatula for even browning. Flip the sandwich carefully and cook the other side until golden brown and the cheese is melted. Remove from the skillet, cut diagonally if desired, and serve immediately.
